People were afraid of night and therefore associated it with evil because of a lack of understanding and that most bad things would happen during it. Daytime was easy to understand and less intimidating, so that brough along the symbolism of light/dark to associate good and evil. The white/black thing was just a lazy way of showing light/dark. There is no racism involved considering many ancient peoples who in their mythology used this symbolism never even knew people of other skin existed. It merely has to do with day and night.

You know, I recently read When Will Jesus Bring the Pork Chops? by George Carlin, and a good 1/4 of the book was focused on political correctness. It's really a terrible thing and is leeching the personality from our society. It's nice to joke about it, but the reality is that unless some dramatic shift in what is truly "polite" occurs then it will only become more omnipresent.
