Took a class in college that discussed such topics as this. Actually the beginning of the white/black good evil deal started out as day/night. People were afraid of night and therefore associated it with evil because of a lack of understanding and that most bad things would happen during it. Daytime was easy to understand and less intimidating, so that brough along the symbolism of light/dark to associate good and evil. The white/black thing was just a lazy way of showing light/dark. There is no racism involved considering many ancient peoples who in their mythology used this symbolism never even knew people of other skin existed. It merely has to do with day and night.
